Veggie quiche

veggie-quicheWell, well thank you everybody for all the likes. I think that must mean you liked it, and in fact this veggie quiche is very good.
To make them you need:
– anykind of veggie you like, I used aubergines, zucchini, carrots and peppers (those two are precooked!!) and you make fine slices.
– pasta brisee
– 1 egg plus 3 egg yolks
– 300gr fresh cream
– 150gr cheese (I use pecorino, the recipe ask for Groviera, but I am not a big fan of it)
– salt, nutmeg and pepper

Mixed up all the ingredients together and then its easy.
Butter your stamp and put the brisèe inside, do not forget to make little holes with a fork! After that, you carefully put in all the veggies starting from the outside. At the end put the egg&cream mixture evenly ontop and up she goes into the oven for 35 min covered with tinfoil at 160, uncover and leave in until it gets a nice color at least another 15/20 min! Let cool down a bit and serve best with some salad. You should try!
