Pheasant in mushrooms sauce

I have found myself many a times with lots of pheasants at my disposal thanks to the hunting. I’ve learnt to prepare and love this wild and tough meat. Those of you who are unable to find pheasant can use chicken or turkey or other game. I believe for all game there is only one fundamental rule: before you start make sure you leave it to marinate in milk for 12 hours. You can use normal whole milk or long-life.
But please remember the meat must be well covered and has to be left in the fridge. Before cooking rinse the meat well.
