Chilli sauce

I adore Chilli, don’t tell anyone but I would put it in everything!!! How can one resist their spicy taste and their gaudy hues?!? In addition to being delicious they are perfect to ornate the kitchen and give it an original and witty touch.

To conserve them at their best I suggest a little secret from the Asian tradition Chilli oil with shrimp paste.

Heat up 400ml of sunflower oil and add 300 grams of finely chopped onions, 20 grams of garlic, 4 g of shrimp paste and melt them slowly on the hob. Add 35g of dry Chilli flakes, 70g of sugar, salt and let it cook slowly for 20 minutes. Once cooked, leave it to cool down and place the sauce in jars so it can keep for a few weeks.
Add it to grilled or steamed vegetables, grilled meat or fish and it will give all your creations that extra touch of flavor.
