Roast chicken

pollo-arrostoPeople ask me all the time about how they should prepare their chicken, honestly there are one thousand ways of doing it and I still have not found my favorite. I think that depends on the season: in the summer I like it with lemon and light with grilled vegetables and salad, now that it is cold outside I want a creamy sauce, maybe mushroom, and backed potatoes or a filling like the turkey filling. In spring you roast it the asian way with soy, coriander and cumin and lots of greens….
But for my taste all this different ways of roast chicken have one thing in common: you baste it with beer and not with white wine! Happy roasting!
