There are recipes that in a quick and easy way can turn simple ingredients (but not for this reason less appetizing) into something delicious. This is one of those recipes. Spinach meets Ricotta cheese and gives life to a delightful dish that is both light and low in calories and is often a hit with both adults and children even though its made of spinach. The only thing you need is a little patience and manual skill to form the topini (as you can see in the picture): you need two teaspoons to form the dumplings that initially won’t be perfect but in no time they will be better than mine!
