The Fake Cheesecake is ideal for those like me who are unfortunately always on a diet!!!! Perfect for when you feel like desert but have to keep an eye on the scales! However, it can be garnished in a variety of ways and always makes a fantastic impression. To create the base shred some low calorie biscuits and mix them in a bowl with a drop of semi skimmed milk. On top of the base pour the cream of my yoghurt pudding recipe (find the recipe here). Allow to rest in the fridge for four hours and then pour some sugar free jelly over the cake (or you can prepare it yourself). Once again let the cheesecake rest in the fridge and before serving decorate to taste with some fruit or anything else and ….buon appetito!
