Easy and delicious eggplants

melanzane-grigliateI want to share this recipe with you, its very banal but also healthy and delicious. Find some of those new type of eggplant that are long and purple with fine black lines. The main difference is they have very fewer seeds and they’re in season at the moment; at least my greengrocer assures me. I saw them for the first time two weeks ago. And by the way they are also delicious!
Slice it lengthwise in 4 parts and place it on some oven paper with a little water. Make sure it’s a very small amount of water.
Season the eggplant with some salt and pepper and a pinch of sugar to tone down the bitterness of the eggplant that not everyone loves especially not children.
Bake in the oven at 140 C for about 40 minutes until they are soft. Then allow them to cool down a little and on each slice put a teaspoon of fresh pesto. Serve as a starter or side dish. They are delicious, try them!
