Chestnut tart is my husband’s favorite sweet. It also happens to be a typical Tuscan sweet that is often present in our home. You can buy it anywhere but like all simple dishes they aren’t always that good. The following recipe is of Salvatore’s mother, she often makes this tart during the winter for a Sunday lunch at home with the family. You don’t need much; a good short pastry and chestnut jam. I always use Checcherini a brand of jam I love.
For the pastry:
150g icing sugar
100g of blended walnuts (because I’m very greedy!)
Blend the frozen diced butter with the flour. All you need is an instant to get the ingredients amalgamated. Then add the rest of the ingredients and mix well. Before using the mixture allow it to rest in the fridge. When ready, cover a baking tin with the pastry then pour a 1cm layer of chestnut jam. Decorate the top of the tart as you wish with the leftover pastry and bake for 30 minutes at 180 C.
