Aromatic herbs are an irreplaceable ally in cooking. I adore them, what about you? All you need is a touch of the right herb to give a special and unique touch to the simplest of dishes. A divine thing to do with herbs is to alternate them in the Greek yoghurt sauce tzaziki or as the English call it Tartare sauce. During the summer in the countryside or on the coast we have a lot of barbecues and this sauce combines perfectly with nearly everything. (fish, meat, bread or baked potatoes). Its light and simple to do (all you need is 5 ingredients) and you will be very popular! (Make sure you make lots…in my household it’s the first thing to go!)
Get 3 tubs of 125g of Greek yoghurt (I use the 2% fat version), 50g of mayonnaise (I use the ready-made version if I don’t have time to make my own), salt, pepper, and a small clove of pressed garlic. Easy right?!? This is the basic version that you can modify depending on your taste or what you have in the house: mint, parsley, finely chopped chives (my favourite!).Chives go nicely alone, parsley is easy to combine with mint, but you can also mix all three together. The sauce is even more delicious if left in the fridge for a few hours. You can also keep it in the fridge for the following 4/5 days.
